A Lovely Meal…

We have been trying lately to eat fish once a week. I read in a book that it’s healthy to work it in to your diet at least once in the week. I really like salmon and I love sweet potatoes and salmon together. I don’t know what it is about the combo but I really love it! This combo makes a lovely meal! (Sweet potatoes in SA are white!)

Easy Salmon
Drizzle with melted butter. Sprinkle fresh dill and salt over top. Cover with foil. Bake in 350F oven for about 20 minutes.
Sweet Potato Wedges
(This recipe comes compliments of Everyday Food magazine from the kitchens of Martha Stewart Living.)
1. Preheat oven to 400F. Peel 3 sweet potatoes; cut in half crosswise and then into wedges about 1 inch wide. Crush 1 garlic clove in its skin.
2. On a rimmed baking sheet, toss the sweet potatoes with the garlic, 1 1/2 tablespoons olive oil, 1/4 teaspoon dried thyme, 1/8 teaspoon crushed red pepper, and 1/4 teaspoon salt. Roast until soft, about 30 minutes.
Green Beans
Boil fresh greens for about 10 minutes or until tender. Drain. Drizzle with olive oil and sprinkle with salt.
