Ok, I’ve been on a “butter” kick. Apple butter, pear butter, and now mango butter. But I love the stuff and I love using the fruits of the season to make something tasty. So I recently experimented and came up with another yummy “butter.” Again so very simple in the crock pot. Oh, and the nuts…Joshua’s staging idea! Love it!
Mango Butter
12-15 mangoes, peeled and cut into chunks
1/2 cup orange juice
1 1/2 tablespoons lemon juice
1/4 cup water
1/4 cup honey
1 teaspoon cinnamon
Put everything excluding cinnamon in crock pot. Cook on low for a few hours. Blend until smooth. Add cinnamon and cook another hour.
*I was scared it might be stringy. I didn’t have anything to strain it so I chanced it and skipped that. When I spread it on my toast the next morning, I was very pleased that the strings didn’t get caught in my teeth!
