That’s the conversation that ensued on our way to pick Jeremy up from his Hong Kong trip. So, rock star daddy, Happy Father’s Day! We love you!
This Father’s Day weekend, I made one of Jeremy’s favorite Indian dishes, Tikka Masala. Yum, yum! I adapted this recipe to my own liking.
Marinade
1 cup plain yogurt
1 tablespoon lemon juice
2 teaspoons cumin
1 teaspoon masala curry powder
2 teaspoons black powder (gives it a little kick)
1 tablespoon freshly minced ginger
3 boneless chicken breasts, cut into chunks
Combine all ingredients and marinade in fridge at least one hour. Heat griddle. Thread onto skewers and grill until juices run clear, about 5 min. on each side.
Chop carrots, green beans, and any other veggies you might like. Boil until soft.
Sauce
1 tablespoon butter
1 clove garlic, minced
1 jalapeno or chili pepper, finely chopped
2 teaspoons cumin
2 teaspoons curry powder
2-3 teaspoons salt, to taste
8 tomatoes, chopped
1 cup coconut milk
Melt butter in heavy skillet. Saute garlic and pepper for 1 min. Add cumin, curry powder, and salt. Stir in tomatoes and cream. Simmer about 20 min or until sauce thickens. Add grilled chicken and veggies and simmer 10 min. Serve with naan or basmati rice (or both!)
Note: Next time I would add less black pepper to the marinade and a little cayenne pepper. I would also add a little cayenne to the sauce.
