So you might remember the chicken, broccoli, and rice bake I made not that long ago with a cheesy sauce. Another easy alternative is with a cream of mushroom sauce. Now living in Africa, I’ve learned to make my own cream soup mixes. Here’s an easy basic and then you can add your preferences!
Cream Soup Mix
(Equal to 8 cans condensed cream soup.)
2 cups dry milk
3/4 cup cornstarch
2 tablespoons dried onion
1/2 teaspoon pepper
1 teaspoon basil
1 teaspoon dried thyme
Combine and mix well. Store in a covered container. To make equivalent of 1 can condensed soup mix, combine 1/3 cup dried mix with 1 cup cold water in a saucepan. Stir over low heat until thickened.
That’s the basic but it’s very versatile. For a mushroom sauce, I add mushrooms and salt (definitely needs salt). It’s also great with a little chicken stock!
