Muffin Madness

You remember how I mentioned that my little girl was writing her own recipes? Well, we’ve begun baking her ideas! We started with your basic muffin recipe…

1 3/4 cups flour
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 beaten egg
3/4 cup milk
1/3 cup oil

In a mixing bowl, stir together flour, sugar, baking powder, and salt. Combine egg, milk, and oil in a separate bowl. Make a well in center of dry mixture. Pour in egg mixture and stir until moistened. Grease muffin tin. Bake in a 400F oven for 20 to 25 minutes or till golden. Makes 12 muffins.

She took notes of the ingredients we added for her original creations…

Oatmeal, Cinnamon, Raisin Muffins

In addition to the basic recipe, we added…

1 teaspoon cinnamon
1/3 cup oatmeal
An additional 1/4 cup milk
1/2 cup raisins

Banana Nut Muffins

We substituted the 1/3 cup oil with 1/3 cup applesauce and added…
2 tablespoons milk (in addition to)
1/2 cup mushed bananas
1/2 cup chopped nuts (we used macadamia nuts)

Mix ingredients as above in basic recipe. Add bananas and mix well. Fold in nuts.

Strawberry Muffins

This one is super easy and my kids loved it!  Simply use the basic recipe and chop as many strawberries as you like and fold in at the end.  I also added a little more milk because it seemed a bit dry.

I did inform her that every baker must wash her own dishes! She gladly helped!

Now that we’re back in the states, I’m hoping we can continue our muffin making adventures!
