Jeremy is still doing most of the cooking around here, but I do take on Thursdays so Jeremy can have his day out, too. This past Thursday I felt a bit rusty, so it was good to get in there and cook! Since I didn’t have a car, I looked in the fridge to see what was in there. Lots of chicken and lots of spinach. When you google spinach chicken recipes, spinach chicken parmesan is one of the first options that come up. I mostly followed the recipe except for a few changes. I didn’t have green onions so I just chopped part of a white onion. I don’t do frozen spinach, so I added some fresh spinach after the onions cooked and cooked it down. I didn’t add the pimentos (don’t do those either). I tasted the sauce after it had simmered a bit and it had no flavor, so I seasoned it with salt, pepper, and italian seasoning. Made a HUGE difference! After all those changes, I really liked how it turned out! It was tasty and went great with our side of wild rice!
