Joshua had his TAKS testing this week. Two days of intense testing on math and reading. Yikes! My mother-in-law, who is a teacher, said they always tell the kids to eat blueberries before taking the test. Joshua is not a fan of fresh blueberries (unfortunately) but when I asked him if he wanted blueberry muffins, his answer was YES!
I’ve made blueberry muffins many times but I decided to do a little searching for a whole wheat recipe. Lo and behold, I found one that the whole family loves. I read through the comments and decided to follow the advice of others. I used all whole wheat flour instead of half whole wheat, half white. I also used 1/8 cup of oil and 1/8 cup of applesauce. I omitted the sugar / cinnamon mixture on top which meant we had whole wheat muffins with no sugar! They were quite amazing and filling. The kids could only eat one for breakfast and said they were full!
