Before we left on our trip, I made chicken sandwiches with homemade wholewheat buns. I love making my own buns, because I feel like they actually fill me up versus the light, airy buns you buy in the store. I didn’t get a picture of the actually sandwiches before they were gobbled up, but they were good. I marinated the chicken overnight in a balsamic, vinegar marinade from CD Kitchen. Warning: if you like balsamic (which I do), you will love this. It does have a strong balsamic taste. I used the wholewheat hamburger bun recipe from Baking Bites. I replaced the brown sugar with honey and followed the rest of the directions. So yum!
