10 Things

1. Sunshine. I lived many years without central AC. While I am very thankful for it during 100 degree days, I still find myself going outside to bask in the sun for a little warmth.

2. A space to write down my thoughts. Currently I’m writing posts on empowerment. Something I’m super passionate about. I’m not done. More thoughts coming!

3. Change of scenery. Maybe I’ve already posted my gratitude on that. I’ve just felt super grateful for the opportunities we currently have to change our scenery in the midst of social distancing.

4. Grilled Thai Coconut Chicken Skewers. A couple of weeks ago, Jeremy made these twice in one week. They’re that good.

5. Learning how to do new things. I’ve had to do this a couple of times recently, and I’ve realized just how much I like the satisfaction of learning how to do something new.

6. Evening walks. It’s probably my favorite time of day to walk. I think it reminds me of Summers spent at my grandmother’s house.

7. Family movie nights. Anyone seen Hamilton yet on Disney+? So great!

8. Options? I do like them, but man. There are SO many choices for electric companies. In South Africa, we had one. My contract with my current provider is ending, so I’m on the hunt for a good plan.

9. Homemade ice cream. That’s EG’s new thing. Man. So good!

10. Fireworks! We saw a fabulous social distanced fireworks show last weekend. My mind drifted to all the years celebrating American Independence Day in South Africa with our dinky fireworks. Such special memories.

1. Receipts. I’m always telling Jeremy not to throw away receipts. It’s not that I want to tear down trees exactly, but I use them to score points that I redeem for Amazon gift cards. My favorite app for doing this is Fetch. I’m unashamedly going to give you my referral code. It’s 1Y6ND. Use that, and we’ll both get extra points! I’ve used Ibotta as well although I find it’s much more labor intensive than Fetch. If you’re interested in that one, my referral code is owapgev. This isn’t a cheap ploy at financial gain, but I’m guessing some of you are like me in that you get giddy over saving a buck or earning money without much effort.

2. Trips to nowhere that remind you to shake off the disappointment, and go with the flow.

3. An afternoon with my girl. I promised her I wouldn’t post the photo we took in front of the big wooden bear. Not that I need a photo to show we had a good time.

4. Puzzles! I love doing them although Emma G says I have a problem. Once I start one, I can’t stop. I bought this one at a 2nd hand store. I thought it was missing a piece until I found it on the floor all chewed up. Oh, this crazy dog of ours!

5. Rainy afternoons in the mountains. Perfect reading weather.

6. Apple cinnamon oat muffins. When I had to go gluten free last year, it was a bummer, because I love bread and pastries. It’s hard to find good gluten free recipes, but this one is excellent.

7. Finishing a book. Such a great feeling. Now I’m on to the next one… Man’s Search for Meaning by Viktor Frankl.

8. Salvation sauce? We seriously saw this in a store yesterday.

9. Conversation. The end of last week I was feeling pretty heavy from recent events. Conversation with God, my husband, and my kids has done wonders.

10. Law & Order marathons. We have DISH up here in the mountains and it seems like some channel is always airing Law & Order marathons. Love that show.

My 10 Things Thankful List

1. That Emma Grace goes to a school where a principal spends 80 hours and 12 days visiting over 600 seniors to help make their senior year during a pandemic a little more memorable. Lots of links to this news story… NY Times, Today, NBC Nightly News… Plus he was one of 4 educators recognized on the Today Show winning $10000 for Emma G’s school!

2. The way the sun is bronzing my skin and lightening my hair as a result of our daily walks. Emma Grace says it makes my skin looks dirty when I get tan. I think she’s crazy.

3. For our friends in Kenya and South Africa delivering food to those in their communities affected by COVID-19. They might not be nurses and doctors, but they are on the front lines.

4. That Taco Tuesday and Cinco de Mayo fell on the same day this year. Score!

5. Evening drives with the fam to go get ice cream. Sometimes you just gotta get out of the house.

6. Topo Chico paired with a lemon or lime. These have become a presence at Friday night pizza. They are fabulous!

7. Emma Grace’s baking. My favorite so far? These peanut butter bombs. Delish.

8. The laugh I got Wednesday when Joshua had to help Jeremy fix the toilet. The gagging sounds coming from him had me belly laughing.

9. The things my kids have said lately that seem just a little bit funnier given the current situation…

Joshua: I just spent 3 hours on Google Earth.

Me: Doing what?

Joshua: I don’t know. Looking at the planet?

10. A friend sending me a video of my kids from 5 or 6 years ago. Their little voices, oh, so cute.

1. Sunsets. We have some amazing sunsets at our property in South Africa that I miss dearly. Last night I took Emma Grace to a park to get a sunset photo for a class assignment. The ducks, the water, the sunset, it was all so beautiful.

2. Numbers? As you’ve noticed, I haven’t posted much this week. That’s because my head has been in numbers. Not necessarily my happy place, but it does feel good when things work logically.

3. Old family photos. Our kitchen table this week has been littered with them. While we can’t eat at the table, I do love the laughing and stories I hear throughout the day.

4. That being said, our family dinners have taken up residence outside. This weather is fabulous, and I’m loving soaking in as much Vitamin D as possible.

5. What I’m not loving is the pollen floating in the air. I hate allergies, but I’m thankful for allergy medicine that provides some relief.

6. I picked some wild flowers last weekend. I love the color that they brought to the table. It brought a little happy inside!

7. Lotion. With all this hand washing, my hands are getting so dry. So thankful for my cocoa butter lotion these days.

8. Some Good News. I like good news in general, but I’m referring to John Krasinki’s weekly YouTube show. You will laugh. You will cry. Seriously, if you haven’t watched it, you must.

9. Travel. With the current world situation and travel not possible, it’s made me realize how thankful I am to be able to see the world. I’m looking forward to the day when I can cross borders again!

10. Spanish brunch. I was super excited to bring our “Spanish brunch” pan back from South Africa, so Jeremy could make one of our favorite breakfasts. This recipe is definitely one you have to try.
