I don’t know about you but I love apple desserts! This is an easy apple dessert I discovered a few years ago when Jeremy worked for a few weeks at an apple orchard in Connecticut. The last day of work he brought home 50 lbs. of apples! I didn’t know what to do with so many so I started searching for desserts. I came across this one that is so easy and you can even make it and freeze it so you can pull it out for a quick and delicious dessert! Here’s the recipe:
1 1/2 cups (about 2 medium) thinly sliced, peeled apples
1/4 cup firmly packed brown sugar
1 tablespoon water
1 teaspoon lemon juice
1 tablespoon all-purpose flour
1 tablespoon sugar
1/4 teaspoon salt
1 tablespoon butter or margarine
1/2 teaspoon vanilla
1 Refrigerated Pie Crust (or pie crust from scratch)
- In medium saucepan, combine apples, brown sugar, 1 tablespoon water and lemon juice. Cook over medium heat until bubbly, stirring occasionally. Reduce heat to low; cover and cook 6-8 minutes or until apples are tender, stirring occasionally.
- In small bowl, combine flour, sugar, and salt; stir into apple mixture. Cook until mixture thickens, stirring constantly. Remove from heat; stir in butter and vanilla. And if you like cinnamon, add some to the mixture. Cool 15-20 minutes.
- Meanwhile, heat oven to 375F. On floured surface, roll out pie crust. Cut into 4 triangles. Spoon mixture onto dough. You can also add raisins if you like. Fold dough over and seal by pressing edges with a fork.
- Bake 25-35 minutes or until crust is golden brown. Serve warm with ice cream on top! Apple mixture makes enough for about 8 turnovers.
