Several years ago I found this Nestle cookbook in the bargain section at Barnes & Noble. I had no idea that it would be such an awesome $7 find. I recently tried these 2 recipes for some birthdays we celebrated. They turned out very tasty!
This one was too easy to taste so good!
Outrageous Cookie Bars
1/2 cup (1 stick) butter or margarine
1 1/2 cups graham cracker crumbs
1 can (14 oz.) sweetened condensed milk
2 cups (12 oz.) semi-sweet chocolate morsels
1 cup flaked coconut
1 cup chopped walnuts
Preheat oven to 350F. Melt butter in 13X9 in. pan in oven; remove. Sprinkle graham cracker crumbs over butter. Stir well; press onto bottom of pan. Pour sweetened condensed milk evenly over crumbs. Sprinkle with morsels, coconut, and walnuts; press down firmly. Bake 25-30 min. or until light golden brown. Cool completely in pan on wire rack. Cut into bars.
Chunky Chocolate Chip Peanut Butter Cookies
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
3/4 cup (1 1/2 sticks) butter or margarine, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup creamy peanut butter
1 large egg
1 teaspoon vanilla extract
2 cups (12 oz.) semi-sweet chocolate morsels *
1/2 cup coarsely chopped peanuts *
Preheat oven to 375F. Combine flour, baking soda, cinnamon, and salt in small bowl. Beat butter, granulated sugar, brown sugar, and peanut butter in large mixer bowl until creamy. Beat in egg and vanilla extract. Gradually beat in flour mixture. Stir in morsels and peanuts. Drop dough by rounded tablespoon onto ungreased baking sheets. Press down slightly to flatten into 2-inch circles. Bake for 7-10 min. or until edges are set but centers are still soft. Cool on baking sheets for 4 min; move to wire racks to cool.
*This is what the original recipe calls for but it was almost too much. I would try reducing morsels to 1 1/2 cups and peanuts to 1/4 cup.
