Malva Pudding


One of the things I love about going to other countries is finding out the foods that are unique to that place. One of the desserts here that I love is Malva Pudding. It’s absolutely delicious! And thanks to Marguerite (my sister-in-law’s sister) for the recipe!


Malva Pudding

2 cups flour
2 tablespoons butter
1 cup sugar
2 eggs
2 cups milk
4 teaspoons baking powder
2 tablespoons apricot jam
2 teaspoons salt
2 tablespoons vinegar
2 teaspoons baking soda

Mix all ingredients together and bake in a 9 X 13 pan at 350F for 45 minutes or until brown.

Sauce
2 cups evaporated milk
1 1/2 cups sugar
2 cups milk
2 teaspoons vanilla
1 1/2 – 1 3/4 cups butter

Melt everything in a pot. Pour sauce over cake as soon as it comes out of the oven. Let it sit for a while to soak up all the sauce.

You can serve it warm with ice cream, or like we do here, with a warm custard sauce over it.
