Exquisite Roasted Vegetables

I love a side of roasted veggies with my meal! They are so easy to make! Just choose your favorite veggies, chop them up, and throw them in a roasting pan. We like potatoes (sweet and baking), carrots, zucchini, onions, patty pans (we get those here in SA), bell peppers, and green beans. Sprinkle 2 minced garlic cloves over veggies and drizzle balsamic vinegar and olive oil on top. Stick in a 400F oven for 1 1/2 to 2 hours. An easy dish that comes out tasting delicious!
