I was in the mood to make some chocolate muffins but didn’t really have a recipe. I’ve been enjoying experimenting with different things anyway. I used the basic muffin recipe from my Better Homes and Gardens cookbook but tweaked a few things. I like dark chocolate so I didn’t make these super sweet. I thought they turned out pretty good and tasted even more amazing topped with fresh strawberries!
1 1/4 cups flour
1/2 cup cocoa
1/4 cup sugar
2 tsp. baking powder
1/2 tsp. salt
1 beaten egg
3/4 cup milk
1/3 cup oil
Stir together flour, sugar, baking powder, and salt. Make a well in center. Combine egg, milk, and oil. Add egg mixture all at once to flour mixture. Stir. Add more milk if it seems dry. Grease muffin cups and bake at 400F for about 18-20 min. Makes 10-12 muffins.
