Chicken Noodle Soup

It just warms the soul, right? Or makes you feel better when you are sick. After being sick the whole week, this was the only thing that sounded good. I was finally able to make some the end of the week. And the homemade bread I stuffed in the freezer several weeks ago came in really handy! If any of you out there are intimidated by trying homemade soups, this has got to be the simplest one to begin with! Here’s my easy recipe for a warm-your-soul and make-you-feel-better chicken noodle soup!

1 pack of chicken (I used about 2 lbs.)
chicken bouillon
salt
pepper
mixed herbs
carrots, chopped
spaghetti noodles

Put chicken in pot. Put in just enough water to cover the chicken. Boil for about 30 minutes. Remove chicken to cool, reserving broth. While chicken cools down, add bouillon to taste (I use the msg free powdered bouillon) and carrots. Let simmer. After chicken is cool enough to handle, pull meat off bone and throw in pot. Feel free to add more water, if necessary. Season with salt, pepper, and mixed herbs to taste. About 10 minutes before serving, add a handful of noodles to pot (I broke them in half). Simmer until noodles are al dente. Serve with warm, fresh bread!
