This is a perfect quick dish when you have small amounts of random food items to throw together! Here’s my version:
1 cup uncooked rice
2 mushrooms, chopped
1/2 onion, chopped
1 clove garlic
broccoli, cut
leftover chicken
Prepare rice according to package directions. In frying pan, heat olive oil over medium heat. Add onions and cook until tender. Add mushrooms and garlic. If your broccoli is frozen, de-thaw it (that’s all you have to do). If it’s fresh, steam until tender.
Sauce
1 tablespoon butter
1 tablespoon flour
1/2 tsp. salt
1 cup milk
1/2 cup (or more!) grated cheese
In saucepan, melt butter. Add flour and whisk, being careful to not let it burn. Add milk. Throw in salt and whisk. Let simmer until thickened. Add cheese and cook until melted.
Mix rice, onion mixture, broccoli, chicken, and cheese sauce into a bowl. Season with salt and pepper as needed. Pour into a square 8X8 pan. Bake at 350F or about 20 min. or until bubbly. Season with salt and pepper, as needed.
