Jeremy and I really love eggplant which is funny because we didn’t grow up eating them. After arriving back to the states, we were so excited to find eggplant on sale! I wanted to cook it one night but didn’t have time to make eggplant parmesan so I went with an eggplant casserole. So good and easy! I added half of a green pepper, chopped, because well, it needed to be cooked! I think this is the kind of recipe where you can easily add to your liking!
