While we were at our retreat last weekend, a friend of mine told me about potato candy. Now I had never heard of potato candy, so I thought she was joking. But no, she wasn’t. It’s a real thing. Now if you aren’t on a diet and like insanely sweet things, read on. You won’t want to miss this.
Ingredients
A small baking potato
Lots of powdered or confectioner’s sugar
Peanut Butter
Directions
Bake a small potato. A small potato will go a long way, trust me. Scoop out inside.
Pour in some powdered sugar. It will turn liquid but don’t worry. It’s supposed to. Continue pouring in sugar and mixing until substance resembles dough.
Shake some sugar onto a surface and roll out dough. Spread a layer of peanut butter over the top. I used natural peanut butter. This candy doesn’t need any more sweetness!
Roll up and slice into small pieces. Set out and candy will harden a bit as it dries. Eat and enjoy!
Am I the only one or has anyone else heard of potato candy? By the way, this is a great thing for kids to make. Just make sure they have several hours to run around outside after eating this pinwheel of sweetness!
