Easter And Lasagna

There’s so much to celebrate today.  A sweet boy is another year older.  Our niece turns 2 today.  And most importantly we celebrate Jesus, who not only died for our sins but rose from the grave!  I’m so thankful I serve a God who is alive!

I can’t wait to share pictures of our weekend with you but for today I bring you the request of a now 8 year old boy.  I told him I would cook him whatever he wanted for his birthday dinner.  Lasagna and strawberry shortcake were his requests!  I don’t normally make lasagna.  I’ve made it one other time before this, so I turned to the internet.  The World’s Best Lasagna sounded just as good as any so I went with it.  I’m glad I read the comments.  They were very helpful.  I used half the salt it called for, went with cottage cheese instead of ricotta, and used the pasta you don’t have to boil first.  I liked it, but most importantly Joshua liked it.  He ate his plate clean!

Zoe, we wish you a very Happy Birthday!  And to all my friends, may we all remember the most amazing gift of life we’ve been given through the most selfless acts of Jesus’ death on the cross.  We serve a GREAT God!
