Banana Bran Muffins

Over ripe bananas, check. Bran, check.  The logical thing to make?  Banana bran muffins!  I’m still very fond of my favorite bran muffin recipe, but these do the trick, too.

1 pureed banana
2 cups bran flake cereal
1 cup milk
1 egg
3 tablespoons vegetable oil
1/2 cup molasses*
1 1/4 cup flour
1 tablespoon baking powder

Preheat oven to 350F.  Add milk and cereal in a mixing bowl and let soak for 2-3 minutes.  Stir in egg, oil, molasses, flour, and baking powder.  Spoon into greased muffin tin and bake 25 minutes.

*I didn’t have molasses so I added 1/4 cup agave nectar.  Turned out great!  The original recipe says to bake at 400F but I lowered it to 350F.  I think I also added 2 bananas instead of one.
