During dinner prep one night, Joshua and I decided to make banana bread. I had bought a loaf pan at Salvation Army, because I just couldn’t stand not having one and missing out on all the yummy banana bread we could be eating! I decided to deviate from my favorite banana bread recipe and try one I found in a cookbook someone gave me. Here goes the recipe for Banana-Wheat Quick Bread…
1 1/4 cups all-purpose flour
1/2 cup whole wheat flour
1 cup sugar*
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups mashed ripe bananas
1/4 cup butter, softened
2 tablespoons orange juice
1 egg
Heat oven to 350F. Grease loaf pan. In large bowl, combine all ingredients and beat. Pour into loaf pan and bake for 55-60 minutes.
*I wasn’t paying attention and added a full cup but it definitely doesn’t need this much sugar. Next time I will add much less.
I think that $1.99 I spent on the loaf pan was already worth it, because this was gobbled up in no time!
