A couple of weekends ago, I made a batch of peach jam. My local Sprout’s had peaches for 49 cents a lb. so it was the perfect time to try it! The ingredient list…
12 medium peaches
2 tablespoons lemon juice
3/4 cup agave nectar
1 pkg. (1.59 oz) instant fruit pectin
I used this cool technique for peeling the skin off the peaches. Once that was done I sliced them and put them in the blender along with the lemon juice and agave for a light blend. Then I poured the mixture into a bowl and stirred in the pectin. The verdict is that I love the taste. It is simply delicious. The consistency, however, turned out more like a dessert topping than a jam to use on bread. I am going to use up this batch as a topping to my granola, yogurt breakfast. Once it’s gone I’ll re-try the ratios to see if I can more of a jam consistency.
