I absolutely love pesto. It incorporates so many lovely flavors, so what’s not to love? Unfortunately my kids aren’t as eager to agree. It’s one of those things where they have it stuck in their heads that they don’t like it, but I can’t understand why. They like everything in it. I’m not giving up. Eventually they will like it! That’s why I keep making dishes with pesto in the hopes that one day they will discover it’s the best thing they’ve ever tasted! I had some pizza dough leftover from our recent birthday dinner so I decided to make a chicken pesto pizza. There are so many pesto recipes out there. This is the one I like to use, found in my South Beach cookbook.
2 cloves garlic
1 cup chopped fresh basil
2 tablespoons olive oil
1/4 cup grated parmesan cheese
2 tablespoons pine nuts
I rolled out the dough, topped it with pesto, sprinkled a blend of Italian cheeses that I had on hand, and topped it with chicken (that I boiled in chicken stock) and asparagus tips. I normally wouldn’t just use the tips of the asparagus but I waited a little too long to cook it and it was not as crisp as I like it. Rather than throw it out, I thought it would be a nice pizza topping! I thought the pizza tasted great! I’m still working on getting my kids to think the same!
