Soak 1/2 lb. of red beans overnight.  In the morning, drain the water and put beans in the crockpot along with…

1 onion, chopped
1 bell pepper, chopped
2 garlic cloves, minced
bacon slices, cut up (turkey bacon is fine)
salt and pepper

I combined all of this with the beans and put enough water to go over the beans by 1 inch.  Cook on low for 10-12 hours.  Add salt and pepper to taste.  These beans were delicious served over rice and with a side of cornbread!
