baked oatmeal

I made baked oatmeal this week.  This is what I learned.  Don’t try a new food on a morning when you have to get your kids to school by 7:20.  Stick with the old faithfuls that they know and love.  While I loved this recipe, my kids weren’t as excited.  I’m trying it again when the circumstances are better!  I went by this recipe but changed it enough that I’m going to post it all here.

Ingredients

2 eggs
1/2 cup agave (or you could use honey)
1 1/2 teaspoons baking powder
1 1/2 teaspoons vanilla
1 teaspoon cinnamon
1/4 teaspoon salt
1/3 cup applesauce
1 1/4 cups milk
3 cups oats
nuts, fruit (optional)

Directions

Grease a 2 quart baking dish.  In a mixing bowl, whisk eggs.  Then add agave, baking powder, vanilla, cinnamon, and salt.  Mix until there are no more clumps.  Add applesauce and milk and mix to combine.  Stir in oats (and nuts and fruit, if using).  Pour into prepared dish.  Refrigerate overnight.  In the morning bake in a preheated 350F oven for about 35 min.  Serve with warm milk, if desired.

I added about a half cup of sliced almonds and 6 oz. of blueberries.  I meant to add bananas in the morning, but at 5:45 AM I cannot think straight and forgot them!  Next time…
