I recently tried Emeril’s Broccoli Cheese Soup recipe. Oh, my! So yum!  I pretty much followed the recipe except for these changes…

*I used red onions instead of yellow.
*I used dried thyme instead of fresh.  Unfortunately I think my herb garden is finished until next season.
*I used fresh broccoli instead of frozen.  I just added how much I wanted hence the very green color!

This soup was so tasty.  The only thing I would do different next time is to omit adding the butter at the end.  I tasted it before I added and it was delicious.  I don’t think it needs it.  In the comments section, I noticed one person added carrots.  That sounds like a lovely addition to this soup and would definitely make for a pretty color!
