Aren’t frittatas wonderful?  They’re so easy and make such a tasty meal.  I used this recipe from Food Network.  Although smoked gouda cheese sounds wonderful, I instead used a mix of cheddar cheeses.  I also used fresh broccoli and carrots instead of frozen.  It was so tasty that we didn’t even need to salt and pepper it!  I would recommend cooking it just a little longer on the stove top with the lid on.  Toasting it in the oven was a great added touch!
