It’s no secret that bread is my weakness. However, lately I’ve been trying to be more selective about my carb choices, choosing only those that are actually going to fill me up. (This is my biggest complaint about store bought bread. I often feel like I’m eating air, because it’s simply not filling.) The other night I made focaccia bread to go with our salad. I turned to the trusty Peter Reinhart and his book, Whole Grain Breads. No white flour and sweetened only with agave, this bread did not disappoint! I topped it with fresh rosemary from the garden, sun dried tomatoes, red onion, and Parmesan cheese. Delightful!
