Jeremy recently found this recipe, peanut soba stir fry, from Budget Bytes. In the midst of our busy VBS week, I thought I would try it (minus the soba). It was incredibly easy! I used an assortment of fresh veggies rather than frozen and served it with brown rice. This meal is incredibly filling and I love the peanut taste. Although I liked it with the brown rice, I think it would be better served with soba noodles. I’ll make it that way next time!
